The cucumber slice serves as a tasty crisp base, which is so light and fresh that you won’t even miss the bread.
For added flavor, you could use different citrus zest in your mayo (we used lemon) or sprinkle in some chopped fresh herbs, such as parsley or chives.

How Do I Make Bacon Avocado Tomato Bites?

Bacon Avocado Tomato Bites
Ingredients
- 6 slices bacon
- 1 medium English cucumber
- 6 tsp mayonnaise
- 1 tsp lemon zest optional
- 1 large avocado sliced
- 1-2 medium tomatoes sliced and cut into portions to fit cucumber slices
- ¼ cup cilantro chopped
Instructions
- Place the bacon slices in a single layer in a cold, large skillet. Heat over medium heat. Cook bacon for about 10 minutes, flipping as needed until cooked through and crispy.
- As bacon slices finish cooking, remove from heat and place on a paper towel-lined plate to drain. Set aside to cool.
- Meanwhile, slice the cucumber at an angle into 12 slices.
- Once the bacon is cooled, break it into smaller strips.
- If using, stir the lemon zest into the mayonnaise.
- Assemble BAT Bites by spreading each cucumber slice with ½ teaspoon of mayo. Add a few pieces of bacon and avocado slices. Add tomato slices and cilantro.
- Hold the layers together with a toothpick. Serve immediately and enjoy!
