These Bacon Avocado Tomato Bites are little nibbles of heaven! They can be enjoyed as a low-carb appetizer or a light meal and take just 20 minutes to prepare. They make such an attractive plate they would be perfect hors d’oeuvres at your next summer gathering.

Bacon Avocado Tomato Bites

These Bacon Avocado Tomato Bites are little nibbles of heaven!

Ingredients

  • 6 slices bacon
  • 1 medium English cucumber
  • 6 tsp mayonnaise
  • 1 tsp lemon zest, optional
  • 1 large avocado, sliced
  • 1-2 medium tomatoes, sliced and cut into portions to fit cucumber slices
  • ¼ cup cilantro, chopped

Instructions

  1. Place the bacon slices in a single layer in a cold, large skillet. Heat over medium heat. Cook bacon for about 10 minutes, flipping as needed until cooked through and crispy.
  2. As bacon slices finish cooking, remove from heat and place on a paper towel-lined plate to drain. Set aside to cool.
  3. Meanwhile, slice the cucumber at an angle into 12 slices.
  4. Once the bacon is cooled, break it into smaller strips.
  5. If using, stir the lemon zest into the mayonnaise.
  6. Assemble BAT Bites by spreading each cucumber slice with ½ teaspoon of mayo. Add a few pieces of bacon and avocado slices. Add tomato slices and cilantro.
  7. Hold the layers together with a toothpick. Serve immediately and enjoy!
