These shrimp fajita bowls are so quick and easy to make – you’ll have dinner on the table in around 30 minutes!

We’ve served up the delicious spiced shrimp and veggies with cilantro-lime rice, but if you want to cut down your carbs, you could always served cauliflower rice instead.

You can add other sides to the bowl too such as Spicy Mango Salsa or Pico de Gallo, as well as chopped avocado or guacamole.

Shrimp Fajita Bowls with Cilantro-Lime Rice

Ingredients

For the Cilantro-Lime Rice

  • 3 cups long-grain brown rice, cooked
  • 2 large limes, juice, and zest
  • 1 tsp ground cumin
  • ¼ cup fresh cilantro leaves (fresh coriander), chopped
  • Sea salt and black pepper, to taste

For the Bowls

  • 2 Tbsp extra virgin olive oil (+ more, if needed)
  • 1 medium red bell pepper, thinly sliced
  • 1 medium yellow pepper, thinly sliced
  • 1 medium orange bell pepper, thinly sliced
  • 1 medium red onion, thinly sliced
  • Sea salt and black pepper, to taste
  • 1 lb (450g) shrimp (prawns), peeled and deveined
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • Sea salt and black pepper, to taste
  • Additional cilantro and lime wedges, for serving

Instructions

  1. Add the cooked rice, lime juice, lime zest, ground cumin, and cilantro to a large bowl. Season with salt and black pepper, to taste, and stir to combine. Cover to keep warm and set aside.
  2. Add two tablespoons of olive oil to a large skillet or frying pan set over medium heat. Add the bell peppers and red onion. Season with salt and black pepper, to taste, and stir to combine. Cook for 10 minutes, stirring occasionally until the vegetables soften and develop a bit of color.
  3. Transfer the veggies to a plate and add the shrimp to the skillet. (Add a little more olive oil, if necessary). Sprinkle with ground cumin, chili powder, and garlic powder. Season with salt and black pepper, to taste, and cook for 3-4 minutes until the shrimp turns opaque. Do not overcook. Add the veggies back to the pan and toss to combine.

  4. To serve, divide the seasoned rice between four serving bowls and top each bowl with the cooked vegetables and shrimp. Garnish with additional cilantro and lime wedges, if desired. Enjoy!
