Ingredients Needed For Apple Pie Cookies
- Fresh Apples – Gala or Granny Smith apples are key for that authentic apple pie flavor.
- Chilled & Dairy – Unsalted Butter, Large Eggs
- Pantry – Salt, Sea Salt
- Light Brown Sugar
- White Granulated Sugar
- Pure Vanilla Extract – Always buy good vanilla, which makes a flavor difference.
- All-Purpose Flour – also known as Plain Flour.
- Cake Flour is a finely milled flour with lower protein content and less gluten. It is lighter and softer than all-purpose flour. Using it in cookies makes them softer, fluffier, and more cake-like.
- You can make your own cake flour by measuring 1 leveled cup of all-purpose (plain flour), removing 2 tablespoons, and adding 2 tablespoons of cornstarch (cornflour). Sift well before using.
- Baking Soda – also known as Bicarbonate of Soda.

How Do I Make Salted Caramel Apple Pie Cookies?

Step 1 – Make Pie Filling: To make the homemade apple pie filling, place the chopped apples, sugar, water, butter, cinnamon, and nutmeg into a medium saucepan over medium heat until the butter melts. Stir to combine and reduce heat to low. Cook for 5 minutes, stirring often, or until the apple pieces have softened.
Make a slurry in a small bowl with cornstarch and water and pour it into the pan. Stir to combine, and continue to stir for 5 minutes until the mixture thickens. Remove from the heat and leave to cool to room temperature.

Step 2 – Preheat and Prep: Preheat the oven to 400°F/200°C/Gas 6. Line a baking sheet with parchment paper or a baking mat and set it aside.
Step 3 – Prepare Wet Ingredients: To make the cookie dough, use an electric stand mixer fitted with a paddle attachment to cream the butter and sugars on medium speed for 2-3 minutes until light and fluffy. Add the eggs and vanilla and mix until combined, scraping down the sides of the bowl as needed.
Step 4 – Prepare Dry Ingredients: Sift or whisk the flour, cake flour, apple pie spice, baking soda, cornstarch, and salt into a large mixing bowl.
Step 5 – Make Cookie Dough: Add the dry ingredients and the caramel bits to the wet ingredients and mix to combine.
Step 6 – Form Cookies: Use a large cookie scoop to scoop out portions of dough, approximately 3½oz/100g. Roll the dough into balls, then flatten them into thin disks.
Use a small cookie scoop to add a scoop of the sweet apple pie filling to the center of half of the flattened dough balls.
Place the other halves of flattened cookie dough on top of the apple-filled ones and roll them together to form dough balls.

Step 7 – Bake Cookies: Place the dough balls onto the prepared baking sheet and bake for 15 minutes or until the dough is just set and no longer shiny.
Remove the cookies from the oven and leave to cool on the sheet for 10 minutes before transferring to a wire rack to cool completely.
Step 8 – Season and Serve: Drizzle the cooled cookies with caramel sauce and a sprinkle of sea salt. Enjoy!

Salted Caramel Apple Pie Cookies
Ingredients
For the Apple Pie Filling
- 4 medium gala apples core removed and diced
- ⅓ cup white sugar
- 3 Tbsp water
- 2 Tbsp unsalted butter
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
For the Slurry
- 1 Tbsp cornstarch cornflour
- 2 Tbsp water
For the Cookies
- 1 cup unsalted butter softened
- ¾ cup light brown sugar packed
- ¾ cup white sugar
- 2 large eggs
- 1 tsp real vanilla extract
- 2 cups all-purpose flour plain flour
- 1 cup cake flour
- ½ tsp apple pie spice
- 1 tsp baking soda
- ½ tsp cornstarch
- ½ tsp salt
- ¼ cup caramel bits
For Garnish
- Caramel sauce
- Sea salt
