Step 1 – Preheat and Prep: Preheat the oven to 350°F/180°C/Gas 4. Line a 9×9-inch square baking pan with a piece of parchment paper, leaving some overhang to lift the cooked blondies out of the pan.
Step 2 – Cream Butter and Sugar: Combine butter and 1½ cups of brown sugar in a large bowl. Whisk until smooth and lightly fluffy.
Step 3 – Add Eggs: Add the eggs and vanilla extract to the bowl and continue whisking until smooth and combined.




Step 4 – Add Dry Ingredients: Sift the flour, baking powder, cinnamon, and salt into the bowl. Gently fold in the flour mixture until combined. Be careful not to overmix.
Step 5 – Prepare Apples: Toss the chopped apples with the remaining brown sugar in a small bowl. Add the apples and white chocolate chips (if using) to the batter and gently fold in.
Step 6 – Bake: Pour the batter into the prepared pan and place into the oven to bake for 30-40 minutes, until the top is lightly browned and a toothpick inserted into the center of the pan comes out mostly clean.


Step 7 – Cool and Serve: Remove the blondies from the oven and leave them in the pan to cool. They will continue to set as they cool down. When the blondies have cooled to room temperature, lift them from the pan, slice, serve, and enjoy!

- 1½ cup + 2 Tbsp light brown sugar packed (divided)
- 2 eggs room temperature
- 2 tsp pure vanilla extract
- 1½ cup all-purpose flour plain flour
- 1 tsp baking powder
- 2 tsp ground cinnamon
- ½ tsp salt
- 2 large apples peeled and chopped
- ½ cup white chocolate chips optional
Instructions
