Ingredients & Equipment Used In This Recipe

While most ingredients can be bought in grocery stores, for your convenience, any specialized or notable ingredients and equipment needed for this recipe have been linked to Amazon or other stores if available online. Staple ingredients such as oil, salt, sugar, etc., aren’t always included here as you’re likely to have those in your kitchen. The complete list of ALL ingredients with measurements is found on the recipe card.

Recipes on The Purple Pumpkin Blog use both cup measurements and/or weighted measurements. American cups and kitchen food scales are handy pieces of equipment to have in your kitchen as it means you’ll be able to make all of the different recipes on my blog. I try to give American, imperial, and metric measurements in my recipes. Please note, that you can mix cup measurements with weighted measurements, but never mix imperial (pounds, ounces, pints, etc.,) with metric (kilograms, grams, litres, etc.,).

  • 1 tsp kosher salt

For the Frosting

  • 2 cups unsalted butter, softened
  • 4 cups powdered sugar (icing sugar/confectioner's sugar)
  • 4 Tbsp heavy whipping cream (double cream)
  • 1 Tbsp key lime juice
  • 3 Tbsp key lime zest

For Decorating

  • ½ cup graham cracker crumbs
  • Half-slices of lime

Instructions

  1. Preheat the oven to 180°C/350°F/Gas 4. Line two cookie sheets with parchment paper and set them aside.
  2. Using an electric handheld or standing mixer, beat the butter, sugar, brown sugar, eggs, and vanilla until combined and fluffy.
  3. In another bowl, place the flour, graham cracker crumbs, baking soda, and salt and whisk together.
  4. Gradually mix the dry ingredients into the wet ingredients and continue to beat until a dough has
    formed.
  5. Using a medium ice cream scoop, scoop dough into your hands and roll into a ball. To make even shaped cookies, I recommend using food weighing scales and weighing each piece of dough to 2.5oz/70g.
  6. Place the cookie balls onto the prepared cookie sheets and lightly press into a thick disk.
  7. Bake the cookies for 15 minutes or until lightly golden brown.
  8. Leave to cool for 5 minutes before transferring to a wire cooling rack to cool completely before frosting.
