Chickpea Avocado Toast

This Creamy Avocado Chickpea Toast is a tasty, healthy, nourishing meal perfect for breakfast, lunch, or even a light dinner.

The addition of the chickpeas adds a beautiful creamy texture while bumping up the fiber and protein of this easy favorite.

We finished off the toast with a dollop of Greek yogurt, but it’s so versatile – you can add whatever toppings you like! A fried or poached egg would go beautifully on top, or even some grilled tomatoes or mushrooms.

Ingredients

  • 2 large ripe avocados
  • 1 (15-oz/400g) can chickpeas, rinsed and drained
  • Juice of 1 medium lemon
  • ½ tsp garlic powder
  • Sea salt and black pepper, to taste
  • ¼ cup parsley, chopped (+ more for garnish, if desired)
  • 6 large slices whole-grain bread, toasted
  • ½ cup Greek yogurt (or coconut yogurt for vegan)

Instructions

  1. Slice avocados in half and remove seeds. Scoop the flesh into a medium mixing bowl. Add chickpeas to the bowl and mash with a fork. Ingredients should be mostly mashed leaving a few nice chunks for texture.

  2. Pour the lemon juice over the avocado chickpea mixture. Add the garlic powder. Season with salt and pepper to taste and stir in the parsley.
  3. Divide the avocado chickpea mixture between the 6 toasted bread slices and top with a dollop of Greek yogurt and some extra parsley. Enjoy!
