This Creamy Avocado Chickpea Toast is a tasty, healthy, nourishing meal perfect for breakfast, lunch, or even a light dinner.
The addition of the chickpeas adds a beautiful creamy texture while bumping up the fiber and protein of this easy favorite.
We finished off the toast with a dollop of Greek yogurt, but it’s so versatile – you can add whatever toppings you like! A fried or poached egg would go beautifully on top, or even some grilled tomatoes or mushrooms.

How Do I Make Chickpea Avocado Toast?

Chickpea Avocado Toast
Ingredients
- 2 large ripe avocados
- 1 15-oz/400g can chickpeas, rinsed and drained
- Juice of 1 medium lemon
- ½ tsp garlic powder
- Sea salt and black pepper to taste
- ¼ cup parsley chopped (+ more for garnish, if desired)
- 6 large slices whole-grain bread toasted
- ½ cup Greek yogurt or coconut yogurt for vegan

Instructions
- Slice avocados in half and remove seeds. Scoop the flesh into a medium mixing bowl. Add chickpeas to the bowl and mash with a fork. Ingredients should be mostly mashed leaving a few nice chunks for texture.
- Pour the lemon juice over the avocado chickpea mixture. Add the garlic powder. Season with salt and pepper to taste and stir in the parsley.
- Divide the avocado chickpea mixture between the 6 toasted bread slices and top with a dollop of Greek yogurt and some extra parsley. Enjoy!
