Tips for Making Jalapeño Popper Mummies
The recipe video is over on my YouTube channel that you can watch and save it to your Playlists for future reference. (Don’t forget to subscribe while you are there!)
- Handling chili peppers can be painful if you’re not careful! And by that I mean it’s easy to forget you’ve been cutting them and then you go to rub your eye and … ouch! To prevent accidental post-chili handling mishaps wear food gloves when you halve and deseed the jalapeños.
- If you should so happen to have a grapefruit spoon in your kitchen use that to scoop out the seeds and membrane from inside the chilies. If you don’t have one, a regular spoon will be fine!
- This recipe uses cream cheese, Mozzarella, and Cheddar, and has a kick of some chili powder. You could use Pepperjack or other combinations of cheese if you like.
- Don’t overfill the chili halves.
- Use a pizza cutter to easily and quickly cut the pastry into strips. If you don’t have one, you can, of course, use a sharp knife.
- When wrapping the dough around the peppers to create the mummy bandages, make sure you leave a gap at the top to place the candy eyes (after cooking).
- Bake on a wire rack over a baking sheet so that the dough bakes all the way around.
- Press the candy eyes into the melted cheese after a few minutes out of the oven so that they stick.
