How Do I Make Roasted Zucchini Dip?

Step 1 – Preheat & Prep: Preheat the oven to 400°F/200°C/Gas 6. Line a rimmed baking sheet with a piece of parchment paper for easy clean-up and set it aside.
Step 2 – Slice & Season: Slice the zucchini and onion into 1/8″ slices and place them into a large bowl with olive oil. Add sea salt and freshly ground black pepper to taste and toss to combine.
Step 3 – Roast: Arrange the zucchini and onion in a single layer on the prepared baking sheet and place in the oven to roast for 18-20 minutes until tender and lightly golden.
Step 4 – Blend: Transfer the cooked zucchini mixture to a blender or a food processor. Add Greek yogurt, cream cheese, fresh herbs, and lemon juice. Process until smooth and creamy.
Taste and adjust the seasoning with additional salt, pepper, and/or lemon juice.
Step 5 – Chill & Serve: For the best flavor, place the zucchini dip in the refrigerator to chill and allow the flavors to marinate for at least 90 minutes prior to serving.
