Zucchini + Eggs
Home » COOK » Recipes »Zucchini (or courgettes) and egg is a favourite Greek-Cypriot dish of mine, and is so simple to make. You need just 3 ingredients – eggs, zucchini and ground cinnamon. Now, I know that the addition of cinnamon sounds a bit weird, but it’s how it is done! You can leave it out though if the thought of it doesn’t sit well with you! It would make a great paleo breakfast or lunch.
Zucchini + Eggs

Serves: 1
Ingredients
- olive oil
- 1 medium zucchini, halved lengthways, halved again and chopped into bite size pieces
- 2-3 eggs
- salt
- ½ tsp ground cinnamon (optional)
Instructions
- Heat a little olive oil in a frying pan and add the chopped zucchini.
- Fry over a medium high heat for 5-10 minutes until softened and browned.
- Meanwhile, beat the eggs with salt and cinnamon (optional) then add to the pan.
- Scramble everything together.
- When the eggs are set, the dish is done.

Oh I’m really intrigued by this, particularly the cinnamon which is a spice I love. Looks really tasty.

Greek-Cypriots seem to put cinnamon in everything they cook! I love it – it’s one of my favourite spices

Courgettes can be bitter, so it’s best to really cook them down x

We’re loving it. After years of yo-yo dieting, I’ve stabilised my weight, and with careful watching of calories, I hope to start losing weight again. But I’m still focusing on fitness rather than weight loss. x
