Zucchini + Eggs

Zucchini + Eggs Paleo Lunch - a tasty dish for lunch or even breakfast from Cyprus.Zucchini (or courgettes) and egg is a favourite Greek-Cypriot dish of mine, and is so simple to make. You need just 3 ingredients – eggs, zucchini and ground cinnamon. Now, I know that the addition of cinnamon sounds a bit weird, but it’s how it is done! You can leave it out though if the thought of it doesn’t sit well with you! It would make a great paleo breakfast or lunch.

Zucchini + Eggs
Yield: 1
  • olive oil
  • 1 medium zucchini, halved lengthways, halved again and chopped into bite size pieces
  • 2-3 eggs
  • salt
  • ½ tsp ground cinnamon (optional)
  1. Heat a little olive oil in a frying pan and add the chopped zucchini.
  2. Fry over a medium high heat for 5-10 minutes until softened and browned.
  3. Meanwhile, beat the eggs with salt and cinnamon (optional) then add to the pan.
  4. Scramble everything together.
  5. When the eggs are set, the dish is done.
