Lemon Chicken Soup

This lemon chicken orzo soup recipe is just one of the ways you can make Greek avgolemono soup.

We use tender chicken, orzo pasta, and some aromatic vegetables and fresh herbs to create a delicious soup that is ideal to serve in the spring. It is often served at Easter, and as someone with Greek Cypriot heritage, Avgolemono Soup is a family favorite!

It is equally the perfect soup to eat on a cold winter night—comfort food at its finest (for us, at least!), and it’s also great when feeling under the weather.

What is Avgolemono?

Avgolemono literally means egg-lemon in Greek and is a family of sauces and soups made with egg yolks and fresh lemon juice mixed with broth, heated until they thicken. 

Greek recipes from Greece and Cyprus, from village to village and even from family to family, can vary greatly. Some will make this soup with lamb or fish. It is also used to make a soup called Giouvarlakia, which contains meatballs and rice. Avgolemono sauce can be poured over vegetables like artichokes or roasted meats.

Step 1 – Gather Your Ingredients

Step 2 – Kitchen Tools

The Purple Pumpkin Blog uses both cups and weighted measurements in its recipes, making American cups and kitchen food scales valuable tools for trying all the recipes. We provide US customary, imperial, and metric measurements. Still, it’s important to note that while you can combine cup measurements with weighted measures, never mix US customary/imperial (pounds, ounces, pints, etc.) with metric (kilograms, grams, liters, etc.).

Step 3 – Saute Vegetables

Heat the olive oil in a large soup pot over medium heat. Add the onions and carrots and season with salt and pepper to taste. Cook for 2-3 minutes, stirring occasionally, until the vegetables begin to soften.

Step 4 – Cook Chicken

Add the chicken and chicken broth to the pot and bring to a simmer. Cook for 20-25 minutes or until the chicken is cooked through.

Remove the cooked chicken from the pot and transfer to a plate to cool. Then use two forks to shred the chicken.

Step 5 – Cook Orzo

Add the orzo to the pot and simmer for 8-10 minutes (or according to package instructions) until tender.

Step 6 – Make Egg & Lemon Mixture

Meanwhile, whisk the eggs and lemon juice together in a heatproof bowl/jug/cup. Set it aside.

Step 7 – Temper Egg & Lemon Mixture

Slowly pour ½ cup (or ladle) of the hot soup into the egg mixture while constantly whisking. This will temper the eggs so they do not scramble.

Continue whisking and pour another two or three ½ cups of broth into the egg mixture.

TIP! This step is very important! Tempering eggs involves gradually mixing beaten eggs, whether cold or at room temperature, into a hot liquid to avoid scrambling or curdling. Proper tempering activates the eggs’ ability to thicken, resulting in a smooth and luxurious texture.

Step 8 – Finish Soup

Pour the tempered lemony egg mixture back into the pot with the shredded chicken.

Cook for another 5-10 minutes, stirring constantly until the chicken is warmed through and the soup has thickened.

Step 9 – Garnish & Serve

Remove the pot of soup from heat and add the fresh dill and parsley. Taste and adjust the seasonings if needed. Serve immediately and enjoy!

Storing Leftovers & Freezing

  • Storing Leftovers:
    • Cool leftover soup (within 1-2 hours), transfer to an airtight container, and store in the fridge for up to 3 days.
    • Reheat gently on the stovetop, stirring occasionally.
  • Freezing Instructions:
    • Not suitable for freezing.

This Lemon Chicken Soup combines juicy chicken, vibrant lemon, and tender orzo pasta—every spoonful is a delight!

Ingredients

  • 1 Tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 1 lb (450g). boneless, skinless chicken breasts, halved lengthwise
  • 8 cups (2L). chicken broth/stock
  • ½ cup orzo
  • 5 large eggs
  • ½ cup lemon juice, freshly squeezed
  • ¼ cup fresh dill, chopped
  • ¼ cup fresh parsley, chopped
  • Sea salt and black pepper to taste

Instructions
