How Do I Make Caprese Chicken Thighs?

Prep Time: 10 minutes | Cook Time: 30 minutes | Total Time: 40 minutes

Step 1 – Preheat & Prep: Preheat oven to 425°F/220°C/Gas 7. Heat a large, oven-safe pan or skillet over medium heat. Add 1 tablespoon of olive oil to the pan.

Combine the Italian seasoning and red pepper flakes in a small bowl. Set it aside.

Step 2 – Season Chicken: Place the chicken thighs in a large bowl and drizzle with the remaining olive oil.

Sprinkle the chicken with one tablespoon of the Italian seasoning mixture. Season with salt and black pepper and toss to evenly coat.

Step 3 – Brown the Chicken: Transfer the chicken thighs to the hot pan and cook for 4 – 5 minutes per side, or until the chicken develops a golden brown crust.

Step 4 – Add Topping: Remove the pan from the heat, and add butter, chicken stock, and cherry tomatoes.

Top each chicken thigh with a slice of mozzarella and sprinkle with the remaining Italian seasoning mixture. Season with additional salt and pepper if desired.

Step 5 – Bake the Chicken: Place the pan into the preheated oven and bake for 15-20 minutes or until the chicken is cooked through and the mozzarella is melted.

Remove the pan from the oven and allow the chicken to rest for 5 minutes.

Step 6 – Garnish & Serve: To serve, spoon pan sauce over chicken and top with fresh basil sprigs. Enjoy!

  • 3 Tbsp extra virgin olive oil, divided
  • 2 lbs (900g) boneless, skinless chicken thighs
  • 1½ Tbsp Italian seasoning, divided

  • Sea salt and black pepper, to taste
  • 3 Tbsp unsalted butter
  • ¼ cup chicken stock
  • 1/2 pint (250g) cherry tomatoes, cut in half or quartered depending on size
  • 8 oz (225g) fresh Mozzarella cheese, sliced ¼"(0.5cm) thick
  • Several springs fresh basil

Instructions
