Chicken Avocado Panini
Just 20 minutes is all you need to make this delicious Chicken Avocado Panini!
The combination of creamy avocado, lusciously melted mozzarella, vibrant spinach leaves, and succulent garden tomatoes come together perfectly to enhance the grilled chicken breast in this grilled sandwich.
You could substitute rotisserie chicken or off-the-bone chicken breast from the deli counter to save even more time.

How Do I Make Chicken Avocado Panini?

Step 1 – Heat Panini Press: Heat your panini press according to the manufacturer’s instructions while you prepare the sandwich.
Step 2 – Add Mustard: Spread one teaspoon of Dijon mustard onto each slice of bread.
Step 3 – Build Sandwich: Top 2 slices of bread with one-half each of the chicken, avocado, tomato, baby chicken, and shredded mozzarella. Add the remaining bread on top to form the sandwich.
Step 4 – Grill Paninis: Brush both sides of the paninis with olive oil and grill in the press for 6-8 minutes (or according to the manufacturer’s instructions) until the bread is golden brown on all sides and the cheese is melted.
Step 5 – Cut & Serve: Remove sandwiches from the press and cut them in half. Serve with fries and/or a choice of side dishes, and enjoy!

Chicken Avocado Panini
Ingredients
- 4 slices white or sourdough bread
- 4 tsp Dijon mustard
- 1 4-oz/100g chicken breast, grilled and thinly sliced
- 1 medium avocado peeled and thinly sliced
- 1 tomato thinly sliced
- 1 cup fresh baby spinach
- 1 cup mozzarella shredded
- 2 tsp olive oil
Instructions
- Heat your panini press according to the manufacturer's instructions while you prepare the sandwich.
