The concept of these truffles is amazing but there’s a few issues with the recipe. First, the small amount of heated cream was not enough to melt the 2 cups of chocolate. Maybe this is where it all went wrong, but I then had to use a double boiler to melt the remainder of the chocolate. After sitting in the fridge for 6 hours, it still hadn’t set enough to roll it into the truffle shapes. I even tried to spread some thin on a pan to freeze and make bark with and it never froze. Between the tequila and the large amount of liquid, I don’t see how you could ever shape these into balls. So now I just have a dip?

Thank you so much for your feedback and experience – I hope at least the dip was good! We’ve updated the recipe to better balance the ratios and ensure the truffles set properly. I’ve also added some additional tips in the notes section. I really appreciate you sharing your experience!
