Mashed potatoes are one of the ultimate comfort foods, and whilst the regular kind is delicious, the addition of garlic takes them to a new level! If you love garlic flavor you are going to love this potato mash!

This recipe is cooked in an Instant Pot which is a fresh take on the old-fashioned pressure cooker.

With the promise of being able to cook a meal in 3 to 10 minutes of pressure cooking, it is no surprise that this new electric appliance is quickly gaining a large fan base.

The Instant Pot is a self-contained unit that sits on your countertop and plugs into an outlet. It takes up about as much space as a rice cooker or a small slow cooker. The Instant Pot is a smart pressure cooker that’s controlled through a digital interface. You tell it how long you want to cook your meal under pressure, set the timer and you’re good to go. It automatically brings up and holds the pressure at a safe level and will not allow you to open the pot while it’s pressurized. This makes it as easy to operate as a microwave.

It is not surprising then that this new take on an old kitchen tool is quickly gaining popularity. The cooking is very hands-off. You simply set it, and then walk away until you’re food is ready. It has all the advantages of using the slow cooker but takes a fraction of the time. Perfect when you want to get a home-cooked meal on the table fast.

  • Fresh Produce – Potatoes – this recipe uses red potatoes, but you can use any variety you like; and garlic.
  • Chicken or Vegetable Broth/Stockyou can use homemade or ready-made stock of your choice.
  • Heavy Cream – also known as Double Cream
  • Unsalted Butter
  • Instant Pot but if you don’t have one you could still cook the potatoes with the garlic in a regular saucepan on the stove.
  • Potato Masher

This recipe uses American cups. They’re a handy piece of kitchen equipment to have along with a kitchen food scale. Having both in your kitchen means you’ll be able to make all of the different recipes on my blog as I use both cups and weighted measures.

Garlic Mashed Potatoes take plain old mashed potatoes to new heights! You'll have this side dish ready in next to no time with this Instant Pot mashed potatoes recipe.

Ingredients

  • 3 lbs / 1.3kg red potatoes, cut into small chunks
  • 6 garlic cloves, smashed and peeled
  • ½ cup chicken or vegetable broth
  • Sea salt and black pepper, to taste
  • ¼ cup heavy cream
  • 3 Tbsp unsalted butter, cut into chunks

Instructions

  1. Combine potatoes, garlic, and broth in Instant Pot®. Season with salt and black pepper, to taste, and stir to combine. Add lid and lock into place. Switch the vent to “Sealing” and set the “Manual” setting to 8 minutes.

  2. When cook time is complete, allow pressure to release naturally for 10 minutes, then manually release any remaining pressure.
  3. Carefully remove the lid and add heavy cream and butter. Mash the potatoes with a potato masher or immersion blender until almost smooth, but still slightly chunky. Taste and season with additional salt and black pepper, if desired.
