Homemade Chocolate Syrup

We all deserve a treat once in a while and these ice cream sodas with homemade chocolate syrup could be the treat you are looking for!
Sure you can buy chocolate syrup at the store, but sometimes it is really satisfying to make your own. Plus you know exactly what goes into it. No hard-to-read ingredients in this syrup!
Just five ingredients are used in this recipe – and one of those is water! You could also make your own no-churn-vanilla-ice-cream if you like (but I won’t tell if you buy it!)
Ice Cream Soda or Ice Cream Float?
This is another one of those “it depends on where you live in the world” things! Which if you’re a regular reader of my blog is a recurring thing!
In the US, an ice cream soda is made with ice cream, syrup, and club soda (soda water/carbonated water – they’re all pretty much the same thing). An ice cream float is made with ice cream and a flavored soda – often root bear or Coke.
In New Zealand and Australia, ice cream sodas/floats are called spiders (according to Wiki at least!) and I’m not sure how I feel about that!!

- Unsweetened Dark Cocoa Powder
- Real Vanilla Extract
- Mini Chocolate Chips – for topping
- Maraschino Cherries – for topping
This recipe uses American cups. They’re a handy piece of kitchen equipment to have along with a kitchen food scale. Having both in your kitchen means you’ll be able to make all of the different recipes on my blog as I use both cups and weighted measures.
Use old-fashioned soda glasses to serve your ice cream sodas, don’t forget straws and long spoons!

Homemade Chocolate Syrup for Ice Cream Sodas
Ingredients
For the Chocolate Syrup
- ½ cup water
- ½ cup white sugar
- ⅓ cup unsweetened dark cocoa powder
- 1 tsp real vanilla extract
- ⅛ tsp salt
For the Ice Cream Soda
- 1 cup club soda
- 3 cup vanilla ice cream
Toppings
- Whipped cream
- Mini chocolate chips
- Maraschino cherries
Instructions
- To make the chocolate syrup, combine the water, sugar, cocoa powder, vanilla extract, and salt in a small pan set over medium heat.
- Whisk vigorously until the sugar is dissolved and the cocoa powder is thoroughly incorporated into the mixture, approximately 2-3 minutes. Remove from heat.
- Add a large spoonful of chocolate syrup to each serving glass and top with enough club soda to fill each glass halfway. Divide the ice cream between the glasses and top with additional chocolate syrup.
- To serve, top each ice cream soda with a generous amount of whipped cream, mini-chocolate chips, and a maraschino cherry. Enjoy!
