While the official start of the autumn equinox is around the 22/23 of September, as far as I’m concerned, it starts on September 1!

I’m a fall baby, and as August gives way to September, it’s pumpkin everything baby!

For my non-American readers, chess pie is a classic, old-fashioned Southern [America] dessert.

This type of pie—or something very similar—was allegedly invented by a cook on a plantation when she was asked what she had prepared. In a Southern accent, her response of “just pie” could have been misheard as “chess pie.”

And pumpkin chess pie is really easy to make, simply beat all the filling ingredients, pour the batter into a pie crust and bake.

We’ve decorated the top of the pie with pastry leaves and pumpkins dusted with cinnamon sugar.

Serve it up with a dollop of whipped cream for a decadent yet homely fall dessert!

Pumpkin Chess Pie Recipe Tips

  • Storing Leftovers: Cool and transfer to an airtight container and store in the fridge for up to 3 days.
  • Freezing: If you want to freeze your pie, bake in a disposable aluminum pie pan as it will help the pie to freeze more quickly.
    • Cool completely and wrap in a double layer of plastic wrap and a layer of foil to help prevent freezer burn and keep out unwanted freezer smells.
    • Ensure that the pie is completely cold before wrapping so that steam doesn’t get trapped between the layers. This could lead to a soggy pie and no one wants that!
    • Place on a flat surface in the freezer.
    • Label with the name of the dish and the date so you can keep track of your food storage.
    • Pumpkin pie will last in the freezer for up to 1 month.
    • To defrost the pie, unwrap it completely and place it in the fridge to thaw overnight (at least 12 hours). Do not thaw at room temperature as it could lead to a soggy bottom (crust) and we definitely don’t want that!
    • Pumpkin chees pie tastes great cold or at room temperature so no need to reheat!

Ingredients
  

For the Pie

  • 1 frozen deep-dish pie crust
  • 1 15-oz/400g can pumpkin purée
  • 2 cups white sugar
  • ½ cup unsalted butter room temp
  • 3 large eggs
  • ½ cup half and half single cream
  • tsp pure vanilla extract
  • 1 tsp pumpkin pie spice

For Decoration

  • 1 small frozen pie crust ready-rolled pastry
  • ¼ cup white sugar
  • 1 tsp ground cinnamon

Instructions
 

  • Preheat oven to 375°F/190°C/Gas 5. Place pie crust into a pie dish.
  • To make the pie filling, use an electric handheld or standing mixer to mix together the pumpkin purée, sugar, and unsalted butter together until smooth.
  • Continue beating the mixture while adding in the eggs, half and half, vanilla, and pumpkin pie spice until everything is combined.
  • Pour the pumpkin filling into the pie crust.
  • Bake in the preheated oven for 45 minutes.
  • Meanwhile, make the decorations by using mini fall cookie cutters to cut pumpkin and leaf shapes from the pie crust.
  • Mix the sugar and cinnamon together and sprinkle over the pastry shapes.
  • Remove pie from the oven and arrange pastry shapes on top. REturn pie to the oven and cook for a further 15 minutes – or until the pie filling has set and the pastry shapes have browned.
  • Remove pie from the oven and leave to cool on a wire cooling rack.
  • When cool, place in the fridge to chill for 2-3 hours before serving.
  • Served with whipped cream. Enjoy and Happy Fall Y'all!
