I love roasted vegetables. They are easy to make and so healthy and delicious. I especially love roasted carrots.

In this roasted curried carrots recipe, the humble orange veggie (or rainbow-colored if you can find them, or grow your own!) is seasoned with curry powder, honey, and thyme, and cooked in the oven to perfection.

The result is a fantastic dish that is perfect for a vegetable side or even as a vegetarian main course when served with rice.

Take the trusty roast carrot to a whole new level of yummy, with this Roasted Curried Carrot Recipe.

Ingredients

  • 2 lbs (900g) fresh carrots, peeled and cut on the diagonal
  • 1 Tbsp olive oil
  • 2 Tbsp honey
  • 1 Tbsp curry powder
  • 10-12 fresh thyme sprigs
  • Sea salt and black pepper, to taste

Instructions

  1. Preheat oven to 200°C/400°F/Gas 6. Line a large, rimmed baking sheet with parchment paper or a nonstick baking sheet. Set aside.
  2. Add carrots, olive oil, honey, curry powder, and fresh thyme to a large mixing bowl. Sprinkle with salt and black pepper, to taste. Toss until well combined.


  3. Pour the seasoned carrots onto the prepared sheet pan and spread them into a single layer without overcrowding.


  4. Place in the center of the preheated oven and roast for 20-25 minutes, turning carrots once halfway through cooking. Carrots should be crisp-tender and nicely browned when ready.


  5. Remove from oven and transfer to a serving bowl or platter. Serve immediately with your choice of entrees. Enjoy!
