Ingredients & Equipment Used In This Recipe
While most ingredients can be bought in grocery stores, for your convenience, any specialized or notable ingredients and equipment needed for this recipe have been linked to Amazon or other stores if available online. Staple ingredients such as oil, salt, sugar, etc., aren’t always included here as you’re likely to have those in your kitchen. The complete list of ALL ingredients with measurements is found on the recipe card.

Recipes on The Purple Pumpkin Blog use both cup measurements and/or weighted measurements. American cups and kitchen food scales are handy pieces of equipment to have in your kitchen as it means you’ll be able to make all of the different recipes on my blog. I try to give American, imperial, and metric measurements in my recipes. Please note, that you can mix cup measurements with weighted measurements, but never mix imperial (pounds, ounces, pints, etc.,) with metric (kilograms, grams, liters, etc.,).

Check out the printable recipe card below with full ingredients and instructions. Any demonstration photos do not print out to save your ink.
Roasted Pear and Blue Cheese Salad
Ingredients
- 3 large firm pears cored and cut into wedges
- ¼ cup extra virgin olive oil divided
- Sea salt and black pepper to taste
- 1 cup balsamic vinegar
- 6 cup fresh arugula rocket, washed and dried
- 6 oz/170g blue cheese crumbled
Instructions
- Preheat the oven to 375°F/190°C/Gas 5. Line a large, rimmed baking sheet with parchment paper or a nonstick baking mat.
- Arrange the pear slices in a single layer on the prepared baking sheet without overcrowding. Lightly brush the pears with 2 tablespoons of olive oil and season with salt and black pepper, as desired.
- Place the baking sheet into the center of the preheated oven and roast for approximately 15 minutes. Remove from the oven and turn each pear over.
- Return the baking sheet to the oven and continue roasting for 10-15 minutes until the pears are evenly browned and fork-tender. Remove pears from the oven and cool slightly. Set aside.
- While pears are roasting, add balsamic vinegar to a small saucepan set over medium heat and bring to a boil. Reduce heat to a simmer and stir frequently until the liquid is reduced to 1/3 of its original volume. The liquid will be thick and syrupy when it is ready. Remove from heat and keep warm until ready to serve.
- Add arugula, roasted pear slices, and blue cheese to a large salad bowl. Add the remaining olive oil and toss to combine.
- Drizzle the warm balsamic glaze on top and serve immediately. Enjoy!
