Ingredients & Equipment Used In This Recipe

While most ingredients can be bought in grocery stores, for your convenience, any specialized or notable ingredients (and equipment) needed for this recipe have been listed below and linked to Amazon or other stores if available online.

It does not include staple ingredients such as oil, salt, and pepper, as you’re likely to have those in your kitchen already. The complete list of ingredients with measurements is found in the recipe card.

  • Fresh Produce Green Beans, Cherry or Grape Tomatoes, Basil, Parsley
  • Dairy Feta Cheese
  • Sherry Vinegar – alternatively, you could use Red Wine Vinegar

Recipes on The Purple Pumpkin Blog use both cup measurements and/or weighted measurements. American cups and kitchen food scales are handy pieces of equipment to have in your kitchen as it means you’ll be able to make all of the different recipes on my blog. I try to give American, imperial, and metric measurements in my recipes. You can mix cup measurements with weighted measurements, but never mix imperial (pounds, ounces, pints, etc.,) with metric (kilograms, grams, litres, etc.,).

How to Make Green Bean Salad

Green Bean Salad with Tomatoes & Feta

Yield: 4-6
Prep Time: 10 minutes
Cook Time: 7 minutes
Total Time: 17 minutes

Prepared and ready to eat in under 20-minutes, this salad combines fresh green beans, tomatoes, fresh herbs, Feta, and vinaigrette.

  • 1½ lbs. fresh green beans, tips removed and cut in half
  • 1 pint grape tomatoes, washed and cut in half
  • 1 T. fresh basil leaves, finely chopped
  • 1 T. fresh parsley leaves, finely chopped
  • 3 T. extra virgin olive oil
  • 2 T. sherry vinegar
  • Sea salt and black pepper, to taste
  • 1 c. Feta cheese, crumbled

  1. Over high heat, bring a large pot of salted water to a boil. Add green beans and cook until crisp tender, approximately 3-4 minutes. Drain the green beans and then transfer to a large bowl of ice water to prevent further cooking.
  2. Remove green beans from the ice bath and pat dry before adding to a large glass or other non-reactive bowl. Add the tomatoes, basil, parsley, olive oil, and vinegar to the bowl and toss to combine. Season with salt and pepper, to taste.
  3. Gently fold in crumbled Feta cheese and serve immediately. Salad can also be chilled and served cold.
