Recipe Tips
- When lining your baking dish with parchment paper (also known as baking paper or greaseproof paper), leave some overhang to easily lift the cooked and cooled brownies out of the pan.
- To keep your brownies fudgy, do not over-mix the batter. Over-mixing will make them cake-like.
- Place the pretzels in a plastic food bag and crush them with a rolling pin.
- Crush the pretzels just enough to create various small pieces to add texture to the brownies. You don’t want to turn them all to dust!
- Reserve some whole pretzels to add as a topping—you can use them to create the portion sizes.
- For a gooey center, check the brownies at the 35-minute mark using a wooden toothpick to see if it comes out with moist crumbs. You want them slightly underbaked for extra fudgy goodness.
- Because brownies are slightly underbaked, you need to cool them completely in the pan before slicing.
- Brownies taste better the next day, so making them the day before serving will be worth it!

- To keep track of your food storage, label each dish with its name, date, thawing instructions, and reheating instructions.
- Store in the freezer for up to 3 months.
- To defrost the brownies, unwrap them entirely and leave them to thaw at room temperature for 2-4 hours.
- Reheat brownies in the microwave for 20 seconds to get that fresh-from-the-oven warmth.

Salted Pretzel Brownies
Ingredients
- 8 oz unsalted butter (2 sticks) diced
- 6 oz dark chocolate roughly chopped
- ¼ cup unsweetened cocoa powder
- 1½ cup sugar
- 1 tsp pure vanilla extract
- 3 large eggs
- 1¼ cup all-purpose flour (plain flour)
- ½ tsp instant espresso powder
- ½ cup dark chocolate chips
- 1 cup mini salted pretzels divided
Instructions
- Preheat the oven to 350°F/180°C/Gas 4. Line a 9×13-inch baking pan with parchment paper and set it aside.
- Add butter and chocolate to a medium saucepan and melt over low heat.
- Stir in the cocoa powder and whisk to dissolve the cocoa in the warm mixture.
- Remove from heat and stir in the sugar and vanilla.
- Add the eggs, one at a time, whisking constantly between each addition.
- Fold in the flour, instant espresso powder, and dark chocolate chips.
- Lightly crush half of the pretzels and fold those into the brownie batter.
- Pour the brownie batter into the prepared baking pan.
- Arrange the remaining pretzels on top of the brownie batter.
- Bake for 40-45 minutes until brownies are mostly set yet slightly gooey in the middle. Start checking doneness at 35 minutes with a toothpick – it should come out clean with moist crumbs and not completely dry.
- Allow the brownies to cool completely before slicing and serving. Enjoy!
