You can mix cup measurements with weighted measurements, but never imperial (pounds, ounces, pints, etc.,) with metric (kilograms, grams, litres, etc.,).

Loaded Brownie Cupcakes Recipe Tips

In this recipe, you’ll be baking the brownies from scratch and using a box of cake mix for the cupcakes. However, if you like, you could use a box mix of brownies, or even ready-made ones, to cut down on your prep and cook time.

Cupcake Making Tips

  • These cupcakes are made using a box of cake mix – the flavor is enriched by using butter, milk, and eggs, instead of the usual oil, water, and eggs.
  • Use your choice of cupcake liners – themed to the cupcakes, plain white or black, or a complimentary color.
  • Use an ice cream scoop to equally divide the cupcake mixture between the cupcake liners. Fill them about three-quarters full.
  • The cupcakes should be ready in about 20 minutes – test their doneness by inserting a toothpick into the cakes. It should come out clean when the cupcakes are cooked all the way through. Bake for an extra 2 minutes and check again.
  • Cool the cupcakes in the pan for 5 minutes before transferring them to a wire rack to cool completely before frosting.

Cupcake Frosting Tips

  • When making the frosting you want the end result to be creamy, smooth, and to hold a stiff peak. You may have to adjust the amount of powdered sugar and cream slightly to achieve the consistency you need.
  • SPRINKLES! Following the theme provided in the recipe, you can use any type you like such as nonpareils, jimmies, stars, confetti, pearls, or shapes.
  • Use a piping bag fitted with a large star tip to pipe the swirl on top of the sprinkle layer.
  • You will need a piping bag fitted with an open star tip.
  • If you feel like you are going to be making a lot of cakes and cupcakes in your future, I think it is worth investing in a set of piping tips so that you know you always have the right ones on hand for a recipe.
  • Do not overfill the piping bag with frosting, and make sure you squeeze the frosting down the bag to expel any air bubbles.
  • If you are not confident with your piping skills you can practice on some parchment paper first and scoop the frosting back into the bag to use on the cupcakes.

Ingredients

For the Brownies

  • 1 cup unsalted butter, melted and cooled
  • 2 Tbsp canola oil
  • 1 ¼ cup white sugar
  • 1 cup light brown sugar, packed
  • 4 large eggs
  • 2 tsp pure vanilla extract
  • 1 cup all-purpose flour (plain flour)
  • 1 cup cocoa powder
  • ¾ tsp kosher salt
  • ½ tsp baking powder
  • 1 cup semi-sweet chocolate chips (plain)

For the Cupcakes

  • 1 Box Triple Chocolate Cake Mix
  • 3 large eggs
  • 1¼ cup whole milk
  • ½ cup unsalted butter, softened

For the Chocolate Frosting

  • 1 cup unsalted butter, softened
  • 2½ cups powdered sugar (icing sugar)
  • ¾ cup cocoa powder
  • 5 Tbsp heavy whipping cream (double cream)
  • 1 tsp pure vanilla extract
  • 3 cups mini heart confetti sprinkles

For the Chocolate Ganache

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy whipping cream
  • 1½ cups mini heart sprinkles

Instructions

  1. Preheat oven to 180°C/350°F/Gas 4 and spray a 9 x 13" baking pan with nonstick baking spray. Set aside.
  2. To make the brownies, whisk the melted butter, oil, white, and brown sugar together in a large bowl.
  3. Whisk the eggs and the vanilla extract into the butter and sugar mixture.
  4. Sift or whisk the flour, cocoa, salt, and baking powder into a large bowl until combined.
  5. Gradually whisk the dry ingredients into the wet ingredients.
  6. Fold in the chocolate chips.
  7. Pour batter into the prepared baking pan and bake in the preheated oven for
    25-30 minutes or until a toothpick comes out clean.
  8. Leave the pan of brownies to cool completely before cutting into small bite-size (about 2"/5cm) pieces and set aside.
  9. Preheat oven to 180°C/350°F/Gas 4 and line cupcake pans with 24 cupcake liners.
  10. Using an electric handheld or stand mixer, place all of the cupcake ingredients into the mixing bowl and mix until combined and smooth.
  11. Scoop the batter into the liners, filling it about ¾ way full.
  12. Bake in the oven for 20 minutes or until an inserted toothpick comes out clean.
  13. Leave to cool in the pan for 5 minutes before transferring to a wire rack to cool completely before decorating.

    Plain Chocolate Cupcake
  14. Using an electric handheld or stand mixer, place all of the ingredients for the frosting (except the sprinkles) into the mixing bowl and beat until combined, smooth, and can hold a stiff peak.
  15. Scoop the frosting into a large piping bag fitted with an open star tip and set aside.
  16. To make the ganache, place the cream into a small saucepan and bring to a boil on medium heat.
  17. Place the chocolate chips into a medium bowl and pour the hot cream on top. Leave for 1 minute then whisk until smooth.
  18. Pour the ganache into a squeeze bottle or piping bag with the tip cut off.
  19. Drizzle the ganache over the brownie bites and add the heart sprinkles on top. Leave to sit for 30 minutes.
  20. To build the cupcakes, pipe a ring of frosting around the cupcake and cover it with sprinkles.

  21. Carefully place the brownie bite in the center of the frosting.
