Ingredients
 
 

  • 1 Tbsp olive oil
  • 4 medium green onions sliced
  • medium bell pepper green, red, or yellow, chopped
  • 6 large eggs
  • 2 Tbsp milk
  • Salt and black pepper to taste
  • 4 flour tortillas 8″ diameter, heated
  • ½ cup shredded Cheddar or Monterey Jack cheese

Instructions
 

  • Heat olive oil in a 10-inch (25cm) nonstick skillet/frying pan over medium-high heat. Sauté the onions and bell peppers for 2 to 3 minutes, stirring occasionally, until crisp-tender.
  • Beat the eggs, milk, salt, and pepper in a medium bowl with a fork or wire whisk until well mixed.
  • Pour the egg mixture over the vegetables in the skillet. Reduce heat to medium. Cook for 4-6 minutes, stirring frequently until the eggs are set but still moist.
