Ingredients
1Tbspolive oil
4medium green onionssliced
1½medium bell peppergreen, red, or yellow, chopped
Heat olive oil in a 10-inch (25cm) nonstick skillet/frying pan over medium-high heat. Sauté the onions and bell peppers for 2 to 3 minutes, stirring occasionally, until crisp-tender.
Beat the eggs, milk, salt, and pepper in a medium bowl with a fork or wire whisk until well mixed.
Pour the egg mixture over the vegetables in the skillet. Reduce heat to medium. Cook for 4-6 minutes, stirring frequently until the eggs are set but still moist.
Spoon the egg mixture onto warm tortillas; sprinkle with cheese.
