Roasted Cauliflower Steaks

If you have never tried roasting cauliflower in the oven (or air fryer) before you are missing out! It’s my new favorite way to cook this humble vegetable!
The roasted cauliflower steaks recipe I’m sharing here works well as a side dish with roast beef (or indeed any roast meat), or as a main dish for vegetarians (and vegans if you use vegan cheese).
There is a little spicy kick from some red crushed pepper flakes, and you can finish the dish off with a sprinkling of fresh herbs and some toasted pine nuts if desired.
In fact, this is a dish you could customise so easily to your personal tastes, and enjoy roasted cauliflower in a variety of different ways.
Ingredients & Equipment Used In This Recipe
While most ingredients can be bought in grocery stores, for your convenience, any specialized or notable ingredients and equipment needed for this recipe have been linked to Amazon or other stores if available online. - Fresh Produce – Cauliflower, Garlic
- Dairy – Parmesan (leave this ingredient out if serving to vegans)
- Italian Seasoning – this recipe uses store-bought Italian Seasoning, but it is so easy to make your own herb mixes, especially if you already have a bunch of herbs and spices in your pantry already. Just mix equal measures of dried basil, oregano, rosemary, parsley, and thyme. You can also add a pinch of garlic granules or powder as well as red chili flakes if you like. Parmesan Herb Roasted Cauliflower Steaks
Ingredients
- 2 large heads cauliflower cut into 4 (1″/2.5cm) thick slices
- 1 Tbsp extra virgin olive oil
- 1½ Tbsp Italian seasoning
- 2-3 cloves garlic finely minced
- ¼ tsp crushed red pepper flakes
- ¼ cup Parmesan cheese freshly grated, divided
- Sea salt and black pepper to taste
- Toasted pinenuts optional
Instructions
- 1Preheat oven to 200°C/400°F/Gas 6. Line a large, rimmed baking sheet with parchment paper or a nonstick baking mat and set it aside.
- Whisk together the olive oil, Italian seasoning, garlic, and crushed red pepper flakes in a small bowl.
- Place the cauliflower “steaks” on a prepared baking sheet and brush with the seasoned olive oil mixture on both sides. Sprinkle half of the grated Parmesan cheese on top and season with salt and black pepper, to taste.
- Place in the center of the preheated oven and roast for 15 minutes. Remove from oven and carefully flip each “steak” and sprinkle with remaining cheese and a bit more salt and black pepper, if desired.
- Return to the oven and roast for another 15-20 minutes or until the cauliflower is fork-tender and nicely browned. Remove from oven and serve immediately sprinkled with toasted pinenuts if desired. Enjoy!
