Chicken, Vegetable & Noodle Miso Soup

I first sliced up a raw chicken breast and put into a steamer to cook for about 10 minutes.
I wanted to use up some vegetables that had been hanging around in my fridge, so I sliced up a carrot into thin batons, sliced up some broccoli into thinnish wedges and shredded some Chinese leaf cabbage. I also had half a red chilli that I finely sliced. You could use any mixture of veg that you like! Just cut them up small and thin so that they cook quickly.
All the chopped veggies went into a saucepan with one chicken stock cube and some boiling water. I left that on the hob to simmer gently whilst I poured boiling hot water over some transparent rice noodles in a bowl and left them to soak for about 5 minutes.
When the chicken was cooked, I threw that into the soup, added a couple of sachets of miso soup mix and a dash of dark soy sauce.
I then drained the rice noodles and added them. A quick stir and then ladled into bowls – easily enough for 2 people!
