Bowtie Pasta Salad with Feta
Ingredients
- 12 ounces bowtie pasta
- 1 cup cherry tomatoes sliced
- 1 cup cucumber sliced
- ½ cup red bell pepper diced
- ½ cup red onion finely chopped
- 1 cup arugula (rocket) chopped
- 1 cup feta cheese crumbled
- ⅓ cup fresh parsley chopped
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Dressing
- ⅓ cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to the package directions until al dente, about 8-10 minutes.
- Drain the pasta and rinse it under cold water to stop the cooking process and cool it completely.
- In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper until fully combined.
