A Tasty Paleo Lunch - Chicken Avocado Peppadew Salad

Lunches are something that I really struggle with, quite often I would find myself working through and then realise it was late afternoon, and go and raid the fridge for a snack. Not good! I’m really making an effort, now that I’ve decided to go paleo, to come up with different lunch ideas, and I’m sharing this chicken, avocado and peppadew salad with you.

I’d been sent a few jars of these piquanté peppers to use in my recipes, and the simplest way was to add them to a salad – they add a lovely spicy kick! Both hubs and I love these peppers, and I often buy them in the summer months, especially when entertaining as they make a fab appetizer! The ones already stuffed with cheese are great, and are my husband’s favourite! I used the mild ones in this salad, and I used the roasted red peppers in another recipe which I will share soon.

Since I’m still new to the paleo way of life, I have been checking foods online to make sure that the ingredient is indeed paleo friendly!

I haven’t given quantities for this recipe, as you can adjust to your personal tastes, or to how many people you are serving.
Ingredients
  • raw baby spinach leaves
  • cooked chicken, chopped
  • avocado, chopped
  • peppadew peppers
  • hazelnuts
  • garlic salt
  • olive oil
Instructions
  1. Combine all the ingredients and dress with little olive oil and garlic salt if you like.
