Just goes to show how far behind I sometimes get myself with blogging…this recipe, for Cheesy Ham Leeks, that I made back on the 1st March for St. David’s Day is only getting written about today – close to a month late!

I learned how to make this dish when I was in school – it is super easy and really tasty as well…lots of cheese in this dish helps with that taste! We ate is as our dinner, but it could also be served as a side dish. You could also turn it vegetarian by leaving out the ham.

First, I cleaned up my leeks (they always get grit down the green parts) and then sliced in half – ish – so that they would fit into my oven dish as you can see. I didn’t waste the extra green tops of the leeks – they went in too.

With the leeks cut to size, I then cooked them in boiling water for about 10 to 15 minutes until tender. I cooled the leeks under a cold running tap until I could handle them, and wrapped each piece with a slice of ham. I bought some nice thick cut ham for this rather than the thin stuff you can buy for sandwiches.

With the ham and leek part of this dish taken care of, it was time to move to the cheesy part.

I made a cheese sauce using soft cream cheese and milk…I heated these ingredients up and stirred to form a smooth sauce, and then added black pepper, grated cheddar cheese and parmesan. You may find you need more or less milk, just eyeball it!

I then poured the sauce over the ham and leeks and topped with some more black pepper and cheese…mmm…cheesy!

Into a hot (200C) oven for 20 or so minutes until the cheese on top had melted and everything was bubbly and golden…I have to say, cheese is one of my vices and this dish was sooo good! Hope you try it out!

Serves 2 as a main dish, or 4 as a side.
Ingredients
  • 2 leeks
  • 4 slices ham
  • 1 x 300g tub soft cream cheese
  • 200g strong cheddar cheese, grated
  • 50g parmesan cheese
  • 200ml milk
  • freshly ground black pepper
Instructions
  1. Clean up the leeks then cut in half (or size to fit your oven proof dish)
  2. Boil the leeks for about 10-15 minutes until tender
  3. When cooked, cool under cold running water until you are able to handle them, and wrap each piece of leek with a slice of ham.
  4. Make the cheese sauce by placing the soft cream cheese into a sauce pan with the milk and some black pepper. Stir until the cream cheese and milk have combined and then add 150g of the grate cheddar and 25g of the parmesan.
  5. Pour the cheese sauce over the ham and leeks, sprinkle with more black pepper and the rest of the cheese.
  6. Bake in a 200C oven for about 20-30 minutes until bubbling and golden.
  7. Serve as a meal in itself or as a side dish.
