Cheese-Stuffed Taco Meatballs
I feel like all I’ve done recently is share a ton of sweet treat recipes with you, and it’s high time a savory dish took center stage.
So here is a great party food recipe for mini taco meatballs that are stuffed with cheese – yum!
They are super easy to make, can be prepped in advance, and are served with a simple tomato dipping sauce.
Serve them on food picks as a party appetizer – a tray full of these meatballs looks so good and they will be snapped up so quickly!
Or you could make larger meatballs for a Tex-Mex meal – serve with tortilla chips and other fixings like guacamole and sour cream and you’ve got yourself a tasty dinner too.

- Almond Flour
- Taco Seasoning – use your favorite brand, or you could make your own which is so easy to do!
Homemade Taco Seasoning
These herbs and spices are what I use in my taco seasoning mix. It makes around 2 tablespoons which is exactly what you need for the taco meatballs.
Just mix the following herbs and spices together and store them in an airtight container.
- 2 tsp mild chilli powder
- 1 tsp paprika
- 1 tsp onion granules
- ½ tsp garlic granules
- ½ tsp ground cumin
- ½ tsp salt
- ¼ tsp dried oregano
- ¼ tsp black pepper
- 1/8 tsp cayenne pepper (optional)

Cheese Stuffed Taco Meatballs
These mini cheese-stuffed taco meatballs are a great party appetizer as well as a tasty Tex-Mex main dish with rice and fixings!
Ingredients
- 2½ lbs / 1kg ground beef (beef mince)
- 2 eggs
- ½ cup almond flour
- ¼ cup milk
- 2 Tbsps taco seasoning, divided
- 1 (8 oz/225g) block cheddar cheese, cut into cubes
- 1 (15 oz/425g) can tomato sauce (passata)
- ½ cup water
Instructions
- Place the beef, eggs, almond flour, milk, and 1 tablespoon taco seasoning into a large bowl and mix together with your hands.
- Using a large ice cream scoop, divide meat mixture into balls. Press a cheese cube into the middle of each ball and close the meat around the cheese. Repeat the process until all meatballs are prepared.
- Refrigerate for 1 hour or overnight. May be frozen in an airtight container for up to one month.
- When ready to cook, preheat oven to 200C/400F/Gas 6.
- Line a large rimmed baking sheet with aluminum foil. Cover with a wire rack. Spray with nonstick cooking spray. Evenly place meatballs on wire rack.
- Cook for 20 to 25 minutes or until the meatballs are completely cooked through.
- To prepare the dipping sauce, combine tomato sauce, water, and 1 tablespoon taco seasoning in a small saucepan. Cook over medium heat, stirring occasionally, for 10 to 15 minutes.
- Serve meatballs with sauce.
