What is Pork Tenderloin?

Pork tenderloin (pork fillet in the UK) is a long, narrow, and boneless pork cut from the muscle that runs along the pig’s backbone.

It’s one of the leanest and most tender cuts of pork, hence the name tenderloin. Because it’s so lean, it cooks quickly and is best when not overcooked—ideal for air frying, roasting, grilling, or pan-searing.

Substitutions and Variations

  • Veggie Variety: Substitute carrots with potatoes, parsnips, or Brussels sprouts for seasonal variation.
  • Citrus Swaps: Switch orange juice for lemon or lime for a tangy flavor profile.

Air Fryer

  • This recipe was made in a Ninja AG301 Foodi 5-in-1 Indoor Grill/Air Fryer.
  • Cook times and instructions will vary among different units.
  • Before preparing this recipe, check the recommended guidelines for pork tenderloin for your specific unit.
  • Preheating your air fryer helps maintain even cook time and ensures proper browning.

Recipe Tips

  • The cook time will depend on several factors, including the internal starting temperature of the pork tenderloin, the size of the whole carrots, and the make/model of the air fryer used.
  • Remove the pork tenderloin from the refrigerator 30 minutes before cooking for best results.
  • Use a meat thermometer to ensure juicy pork tenderloin—don’t guess the internal temp!
  • Check your country’s guidelines for the safe temperature for pork loin.
    • In the US, it is 145°F (63°C).
    • In the UK, it is 70°C (158°F) for 2 minutes.
  • Let the pork rest before slicing so the juices redistribute for extra flavor.

Storing Leftovers

With all leftovers, ensure the food looks and smells okay before consuming.

Storing Leftovers:

  • Cool (within 1-2 hours), transfer to an airtight container, and store in the fridge for up to 3 days.

Ingredients

For the Marinade:

  • ½ cup orange juice
  • 2 tsp orange zest
  • 3 Tbsp extra virgin olive oil divided
  • 3 Tbsp honey
  • 2 Tbsp soy sauce
  • 2 Tbsp balsamic vinegar
  • 1 tsp garlic powder
  • 1 Tbsp chili-garlic sauce

Remaining Ingredients:

  • 1 lbs pork tenderloin
  • 1 lb carrots peeled and tops trimmed
  • Salt & black pepper to taste
  • Fresh thyme sprigs for garnish

Instructions

  • Prepare the marinade by combining all ingredients in a large glass or other non-reactive bowl. Stir to combine and set aside.
  • Place pork tenderloin in a large (gallon-sized) food bag and pour half of the marinade on top, reserving the rest to use later.*
  • Tightly seal the bag and marinate the pork at room temperature for 30 to 60 minutes or place in the refrigerator overnight. Turn the bag several times while marinating to ensure the pork is evenly covered.
  • Remove the pork from the refrigerator 30 minutes before cooking and set aside.
  • Turn on the air fryer and select the “Air Crisp” function. Set the temperature to 400°F (200°C) and adjust the timer to 20 minutes. Press “Start” to pre-heat the unit.
  • While the air fryer is heating, place the carrots on a plate and drizzle with one tablespoon of the remaining marinade. Toss the carrots to ensure they are evenly coated and set aside.
  • When the air fryer beeps and flashes “Add Food,” place the marinated pork tenderloin inside the basket. Add the whole carrots around the pork, as shown, and close the lid.

  • After 10 minutes, lift the lid and carefully turn the tenderloin and whole carrots. Close the lid and continue air frying until the cook time is complete.
  • Remove the pork tenderloin and carrots from the air fryer and allow the pork to rest for 3-5 minutes.
  • While the pork is resting, heat the remaining marinade just until warm. Slice the pork tenderloin and serve immediately with the whole carrots and a drizzle of the warm marinade on top. Enjoy!

Notes

  • *If preparing in advance, place the reserved marinade in an airtight container with a tight-fitting lid and store in the refrigerator until ready to use.
  • The safe internal temperature for pork tenderloin is 145°F (63°C). Remove from the air fryer when the temperature is just above 140°F (60°C), as the temperature will continue to rise several degrees while the pork rests.
  • For best results, check the internal temperature after 15 minutes and adjust final cook time accordingly.
  • Check local guidelines for food-safe temperatures in your country.
