Homemade Cinnamon Granola
Ingredients
- 2½ cups rolled oats
- ½ cup walnuts chopped
- ½ cup pumpkin seeds
- 5 tablespoons coconut oil
- 5 tablespoons maple syrup
- 1 tablespoon pure vanilla extract
- 2 teaspoons ground cinnamon
- 1 pinch salt
- ½ cup dried cranberries
- 2 cups Greek yogurt
- 1 Apple sliced, optional, for serving
- Ground cinnamon optional, for serving
SUGGESTED PRODUCTS
- 11 x 17 inch Baking Sheet with rim
- 4 Parfait Glasses or 8-oz Mason Jars
Instructions
- Preheat the oven to 350°F/180°C/Gas 4. Line a large rimmed baking sheet with parchment paper.
- Place the rolled oats, walnuts, pumpkin seeds, coconut oil, maple syrup, vanilla extract, cinnamon, and salt in a large bowl.

- Mix well until everything is lightly coated with the oil and maple syrup.

- Spread the granola evenly over the prepared baking sheet. Bake for 20 minutes, stirring after 10 minutes.

- Remove the granola from the oven and leave to cool completely to room temperature. It will become crisp as it cools.

- Divide the Greek yogurt and granola between four parfait glasses or mason jars, alternating the ingredients to create layers.

- Add sliced apples and an extra sprinkle of cinnamon, if desired. Alternatively, serve the yogurt and granola together in a breakfast bowl. Enjoy!
