- 2½ cups rolled oats
- ½ cup walnuts chopped
- ½ cup pumpkin seeds
- 5 tablespoons coconut oil
- 5 tablespoons maple syrup
- 1 tablespoon pure vanilla extract
- 2 teaspoons ground cinnamon
- 1 pinch salt
- ½ cup dried cranberries
- 2 cups Greek yogurt
- 1 Apple sliced, optional, for serving
- Ground cinnamon optional, for serving
Preheat the oven to 350°F/180°C/Gas 4. Line a large rimmed baking sheet with parchment paper.
Place the rolled oats, walnuts, pumpkin seeds, coconut oil, maple syrup, vanilla extract, cinnamon, and salt in a large bowl.
Mix well until everything is lightly coated with the oil and maple syrup.
Spread the granola evenly over the prepared baking sheet. Bake for 20 minutes, stirring after 10 minutes.
Remove the granola from the oven and leave to cool completely to room temperature. It will become crisp as it cools.
Divide the Greek yogurt and granola between four parfait glasses or mason jars, alternating the ingredients to create layers.
Add sliced apples and an extra sprinkle of cinnamon, if desired. Alternatively, serve the yogurt and granola together in a breakfast bowl. Enjoy!
Tips
- Stir the granola halfway through baking to help it cook evenly.
- The granola will still be relatively soft when it first comes out of the oven—it becomes crisp and crunchy as it cools.
- Make sure the granola has cooled completely before storing it.
- You can also skip the parfait layers and serve the granola with Greek yogurt in a breakfast bowl.
Substitutions
- Try serving the parfait with sliced apples, or add other fresh fruit you have on hand.
- For an extra cinnamon flavor, sprinkle a little ground cinnamon over the parfait just before serving.
Leftovers
- Store leftover homemade granola in an airtight jar or a sealed food storage bag in a cool, dry place for up to 2 weeks.
- Keep Greek yogurt refrigerated separately and assemble the parfaits when ready to serve so the granola stays crunchy.
- Not Suitable for freezing.
