Chicken Cacciatore Spaghetti
Ingredients
- 3 tablespoons extra virgin olive oil divided
- 6 chicken thighs bone-in, skinless
- 1 large onion thinly sliced
- 8 ounces mushrooms chopped
- 4 garlic cloves minced
- 1 red bell pepper thinly sliced
- ¼ cup dry red wine
- 28 ounces crushed tomatoes, undrained (2 x 14-ounce cans)
- ½ teaspoon dried oregano
- ½ teaspoon red pepper flakes
- ½ cup black olives pitted and halved
- 2 teaspoons capers
- ¼ cup fresh parsley roughly chopped
- Sea salt and black pepper to taste
- Cooked spaghetti or polenta to serve
Instructions
- Heat 2 tablespoons of olive oil in a large high-sided skillet or Dutch oven over medium heat. Add the chicken thighs, season generously with salt and black pepper, and sear on all sides for 4-5 minutes until golden. Transfer the chicken to a plate and set aside.

- Add the onion and mushrooms to the same pan and season with salt and black pepper. Add the remaining tablespoon of olive oil if needed, then cook for 4-5 minutes until the onion is translucent and the mushrooms have softened.

- Add the garlic and red bell pepper and cook for 2-3 minutes.

- Pour in the red wine, then add the crushed tomatoes and their juices, oregano, red pepper flakes, olives, and capers. Stir everything together.

- Bring the sauce to a gentle simmer over medium-low heat.
- Return the chicken thighs and any accumulated juices to the pan. Cook for 30-35 minutes until the chicken is cooked through and the sauce has thickened slightly.
