Ground Turkey Bean Soup
Ingredients
- 2 tablespoons extra virgin olive oil
- 1 medium onion diced
- 2 celery stalks thinly sliced
- 2 large carrots diced
- 2 garlic cloves minced
- 1 pound lean ground turkey
- 2 teaspoons Italian seasoning
- 14 ounces cannellini beans (1 x 14-ounce can), rinsed and drained
- 4 ounces diced green chiles (1 x 4-ounce can)
- 4 cups low-sodium chicken broth
- 3 cups baby spinach
- 2 cups chard thinly sliced
- 1 medium lemon juiced
- Sea salt and black pepper to taste
- Lemon wedges for serving
Instructions
- Heat the olive oil in a large soup pot over medium heat.
- Add the onion, celery, carrots, and garlic. Season with salt and black pepper and sauté for 3-4 minutes, stirring occasionally, until the vegetables begin to soften.
- Add the ground turkey. Cook for 4-5 minutes, breaking up the meat with a wooden spoon as it cooks, until it begins to brown.

- Stir in the Italian seasoning, cannellini beans, diced green chiles, and chicken broth.
