I used half of my red and white cabbages to make a Quick Winter Cabbage Pickle and used the other half to make a winter slaw for my Boxing Day Buffet. I added cranberries and macadamia nuts to add a different texture to the slaw and of course, for a festive touch.

Ingredients

  • ½ small white cabbage
  • ½ small red cabbage
  • 2 medium carrots
  • 1 red onion
  • 12 Brussels sprouts
  • 4-6 tbsp mayonnaise
  • 150g cranberries and macadamia nuts (optional)

Instructions

  1. Shred all the vegetables in a food processor, or by hand if you don't have one.
  2. Place in a bowl and add mayonnaise to your desired consistency and taste.
  3. Stir in the cranberries and macadamia nuts.
