Scrummy Strawberry Ice Cream

Barbecue, and thinking, “this is easy, I’m going to make another flavour today” (since we had two barbecues at the weekend!), I decided to try strawberry.
Normally, I’m not overly keen on strawberry ice-cream, but wowzas, this stuff was gooood! It is made is exactly the same way as the mango ice-cream, but using strawberries instead…duh!
You’re going to need…
- 400g strawberries, stalks removed
- ½ cup sugar
- 1½ cups double cream
- 1tsp lemon juice
You know the drill…puree fruit, sweeten with sugar (you may have to adjust the sugar amount depending on the sweetness of the strawbs)
Whisk up the cream until stiff peaks…add the lemon juice.
Blend in the fruit puree until just combined, then into a freezer-proof container and in the freezer for 3 hours. I found a shallow container works best (and freezes quicker!!)
And, my oh my…yum, yum, yummity yum!! So strawberry-ey, so smooth, so creamy…so delicious! If you can make it, make it NOW!
The only thing I would do differently next time is save some of the strawberries and cut into really small pieces and fold through the cream – just to give it a different texture. Other than that, it is perfect!

It’s really quick and easy to do – I’ve made this a few hours before people have shown up for a BBQ with no worries at all :)
