Now for the sweet stuff! I made Marvellous Mango Ice-Cream as one of the desserts at our Is It Summer Yet?! Barbecue.

After seeing a recipe for mango ice cream at A Baker’s House, I decided that I needed it in my life! I went out and bought some double cream and mangoes…two of the [just]four ingredients needed for this super scrummy, easy peasey ice cream! The other two items being sugar and lemon, both of which I always have in stock.

The best news is, you don’t need an ice cream machine to make it! Just a blender and a freezer! Simple? Oh yes!

Ingredients

  • 3 ripe mangoes, peeled and cubed
  • ½ cup sugar
  • 1 cup double cream
  • 1 tsp lemon juice

Method

Take your peeled and cubed mango, along with the sugar and put into a blender. Whizz until you get a puree.

Then, whisk up the cream (by hand, or in a mixer) until you get stiff peaks – be careful not to over whip, or you end up with butter – not good! Add the lemon juice.

Pour in the mango puree and whisk together till just combined. Then pour into a freezer-proof container – I found that a shallow one worked best – and pop in to freeze for 3 hours.

At about 3 hours, the ice cream is just set (but it will depend on your freezer), this is the ideal consistency giving it a creamy texture that makes for delicious ice cream! If you need to make this well in advance, simply take out for half an hour so that it can soften.

Spoon into serving bowls and watch how quickly people devour this!

It was so creamy and sweet (adjust the sugar to your taste if needs be) and the mango purée still had a bit of texture to it, making for a taste sensation!

I’m not sure how long this would last in the freezer (ours didn’t…it was eaten in one sitting!), but I think you can freeze cream for a month, so just double check on the side of the container. Thing is, it’s so easy (and quick) to make, you can prepare it in the morning and it’s ready for the afternoon! Unless you are really pressed for time, you don’t need to make it too far in advance.

After the roaring success of this mango ice cream, I tried my hand at making Scrummy Strawberry Ice Cream!
