Paleo Bacon + Apple Hash

For years I’ve been bouncing around from diet to diet, and feeling worse and worse about myself, but finally, I think I’ve found a plan that fits for me. Both hubs and I are enjoying trying out new recipes we find online, or make up ourselves, and my husband recently found this recipe online and surprised me one morning with a plateful of this for breakfast! On looking at it your mind is fooled that there a little chunks of potato as you would normally find in a hash, but then you taste the sweet apple, which goes surprisingly well with the salty bacon, and dusted with cinnamon. This is now a favourite weekend breakfast for us! We switched the butter in the original recipe for olive oil instead, as we didn’t have any butter in the fridge!
Paleo Bacon + Apple Hash
Ingredients
- 4 eggs beaten
- 4 slices back bacon cut into small pieces
- 2 apples peeled and chopped into small pieces
- 5 walnut halves roughly chopped
- ½ tbsp olive oil
- 1 tsp ground cinnamon
Instructions
- Scramble the eggs with the olive oil and remove (keep warm)
- Add the bacon to the pan, and cook until just about done.
- Add the apple pieces and cook with the bacon for a few minutes.
- Add the eggs back to the pan with the chopped walnuts and stir everything together.
- Sprinkle over cinnamon (you can use more or less according to your taste).
- Serve on warmed plates.
