Oven Baked Spicy Sweet Potato Fries

I always though sweet potatoes had orange flesh – but these were white inside. So you might be fooled into thinking that these are regular potatoes – they’re not!
Peel and cut your potatoes (sweet or regular!) into chips/fries shapes and place into a bowl. Add a splash of olive oil, or spray with one-cal oil spray. Sprinkle with some sea salt, some mild chilli powder and some smoked paprika. Crush in a garlic clove or two. Mix everything together and lay out on a baking sheet. Bake in a hot oven (200C) for about 20-30 minutes, until cooked through and golden.
To make the meatballs, I just mixed the lean minced beef in a bowl with some finely chopped onion, a beef OXO cube, an egg and some salt and pepper. I formed into meatballs and chilled for half an hour, before browning in a pan on all sides. I then poured over a jar of pre-made spaghetti sauce, and let simmer away for 30 minutes until the meatballs were cooked through. I also threw in some sliced field mushrooms that I had knocking about the fridge.
Fully aware this probably isn’t how you make a meatball sub, but we fancied a change – always do the same things over and over with minced beef.
I am always aware of calories, and try to keep things as low as I can. This means I avoid frying, if I need to fry, I dry fry or use some one-cal oil spray. I buy the leanest meat I can, and chop off any visible fat. I also drain off fat when frying off mince.
Even though this meal looks like it would be laden with calories, it isn’t too bad. I’m going to guestimate it at around 500 calories? Maybe 600…but I didn’t work it out so don’t quote me on it!
