Can’t have a Mardi Gras night without some sort of cocktail! So, to serve along with our Cajun Crab & Prawn Beignets, Cheats Jambalaya and Cayenne Buttered Corn on the Cob, I made a big jug of Mardi Gras Rum Punch…*hic* …went down rather nicely! Make as much as you need ;)

Ingredients
  

  • 4 parts pineapple juice
  • 4 parts orange juice
  • 1 part maraschino cherry juice/syrup
  • 2 parts dark rum
  • orange slices
  • maraschino cherries
  • crushed ice

Instructions
 

  • In a large jug, stir together the rum, pineapple and orange juice and the cherry syrup/juice (use it up from the jar of cherries, or you can buy maraschino syrup.)
  • Add lots of crushed ice
  • Add orange slices and cherries
  • Serve poured over ice
  • To make this a virgin, leave out the rum!
