Make You Feel Good!! Salad

I am sure that what you put into your body shows on the outside, and that is why I’ve had the epiphany to cleanse my mind, body and spirit with a detox, eating only whole, natural foods. After just one week I feel soooo much better in myself and that is a good thing!
Here is what I put into my ‘Make You Feel Good!!’ Salad…I haven’t given quantities, as you will want to customise your salad to your own tastes.
- rocket leaves (arugula)
- watercress
- spinach
- romaine lettuce
- fresh flat leaf parsley
- sliced red onions
- diced spring onions
- sliced broccoli florets
- sliced cauliflower florets
- grated carrot
- halved cherry plum tomaotes
- sliced radishes
- sliced red, yellow, orange, green bell peppers
- sliced cucumber
- canned sweetcorn
- canned beans – cannellini or chickpeas or pinto or black eyed peas for example
I place all the prepared ingredients into a huge bowl and give it a good mix then cover and place in the fridge. When I’m ready to have some salad for lunch or dinner (I try and have some with each meal, as it’s great to have raw foods) I serve a portion and add some of the following toppings
- mixed seeds – pumpkin, sunflower, linseed, chia
- nuts – walnuts or cashews (unsalted)
- avocado chunks
- home made houmous
- home made guacamole
And finally, I add a dressing which I make using the following ingredients whisked together, again, adjust to your tastes.
- 3 parts extra virgin olive oil
- 1 part apple cider vinegar
- pinch dried oregano
- freshly ground black pepper
- pinch grated garlic

This one sounds great! I always have to avoid cake receipes, I don’t bake any more as I’d end up eating it all. But I love food and now I look for healthy receipes full of tasty good for me things!
