I bet most people would say “hash browns” when asked what potato dish they would eat at breakfast time. It’s a pretty staple side that tastes good and goes so well with other breakfast foods like eggs and bacon.
But if the only potato dish you’ve eaten at breakfast is hash browns, you are missing out!
Potatoes at breakfast are not really a common thing in the UK – they’re certainly not on the traditional full English! But in the US they have a whole plethora of breakfast sides!
I love American breakfast foods because they are so different from ours in the UK, and when we were able to travel, trying the different dishes was always tasty experience!
These parmesan breakfast potatoes are made in a cast-iron skillet, but you could make them in a regular frying pan if you so wish.
Cubes of potato are cooked with red bell pepper and red onion, and seasoned with garlic, paprika, rosemary, and parsley – so they pack a flavor punch. They are sprinkled with some parmesan cheese before serving, and go great with fried eggs!

Parmesan Breakfast Potatoes
These easy Parmesan Breakfast Potatoes are a scrumptious side dish that pairs perfectly with fried eggs for breakfast.
Ingredients
- 3 large baking potatoes, diced
- 1 Tbsp water
- 1 Tbsp extra virgin olive oil
- 1 medium red bell pepper, diced
- ½ medium red onion, diced
- ½ tsp garlic powder
- ½ tsp dried parsley
- ½ tsp dried rosemary
- ½ tsp smoked paprika
- Sea salt and black pepper, to taste
- ¼ cup Parmesan cheese, freshly grated
Instructions
- Add the potato and water to a large microwave-safe dish and cover. Microwave on high for 3-4 minutes, or just until potatoes are crisp-tender, but not mushy. Do not overcook.
- Meanwhile, heat olive oil in a large cast-iron skillet over medium heat. Add the red pepper and onion and sprinkle with garlic powder, parsley, rosemary, and smoked paprika. Season with salt and black pepper, to taste, and stir to combine.
- Cook for 3-4 minutes, stirring frequently until the pepper and onion soften and develop a bit of color.
- Drain excess moisture from the potatoes and pat dry. Transfer to the skillet and season with additional salt and black pepper, as desired.
- Cook for 6-7 minutes, stirring occasionally until the potatoes are golden brown and slightly crispy. Season with additional salt and black pepper, if desired.
- Remove from heat and sprinkle freshly grated Parmesan cheese on top of the warm potatoes. Cover just until the cheese melts and serve immediately. Enjoy!
