How Do I Make Coconut French Toast?

Step 1 – Preheat: Heat your oven to 200°F/100°C/Gas ¼ (or the lowest your oven will go) to keep the French toast warm while you cook in batches).
Heat a large non-stick pan or skillet over medium heat. Add coconut oil.
Step 2 – Make Batter: Whisk the eggs, coconut milk, vanilla, and salt in a shallow dish. Place shredded coconut in a separate shallow dish.
Step 3 – Dip Bread: Dip each slice of bread into the egg batter, turning to coat both sides. Transfer to the dish of coconut and press lightly. Flip to coat bread with shredded coconut evenly on both sides.
Step 4 – Cook Bread: Add the dipped bread to the hot skillet and cook for 4-5 minutes per side until golden and crisp on both sides.
Place cooked slices of French toast on a cooling rack over a sheet pan and transfer to the oven to keep warm.
Continue working in batches until all pieces of bread are cooked.
Step 5 – Serve: Plate 2 slices of French toast per person. Top as desired with butter, maple syrup, and fresh berries. Enjoy!

- 1 cup coconut milk
- 1 tsp pure vanilla extract
- ¼ tsp salt
- 8 thick slices stale sourdough bread or any sturdy bread of choice
- 1 cup unsweetened shredded coconut
- 4 tsp butter for serving
- 4 Tbsp real maple syrup for serving
- 2 cups fresh berries for serving
Instructions
