Citrus Chilli Scallops & Prawns

Here is what you will need to make this dish – it’s hard to say how much I used since I just cook by eye if not following a recipe!
Citrus Chilli Scallops & Prawns
Ingredients
- raw king prawns
- raw scallops (I used small ones)
- 1 lemon
- 1 lime
- 1 red chilli, finely chopped
- 2 spring onions, finely chopped
- 1 garlic clove, finely chopped
- salt
- oil for frying
- salad leaves to serve
- avocado slices to serve (optional)
I actually cooked my prawns and scallops separately…because I forgot that I had them in the fridge! But you could cook them together – just check the cook times on the packaging – it’s about 3 – 4 minutes for them both.
Heat a frying pan and add some oil (I use olive oil) and throw in the spring onions, garlic and prawns (and scallops). Allow to the prawns to turn pink on one side and flip over. Add the chillies. Keep stirring so that the garlic doesn’t catch. I tend to allow my prawns to caramalise a bit, because that’s how we like them, then add the lemon juice, lime juice and a sprinkling of salt. Keep stirring around until the citrus juice has created a sticky sauce.
Serve up on some salad leaves. I had an avocado that I also sliced up and served with.
We yummed them up!
