Chocolate and Bailey’s Irish Cream Cupcakes

I iced half of my cupcakes (using the mixture that I made for my Green St. Patrick’s Day Cupcakes) with swirls of Bailey’s Irish Cream infused buttercream. OMGYUMMY!
Let’s re-cap. I made a batch of vanilla cupcakes adding 200g of chocolate chunks/chips and coloured the batter green.
Divide the mixture between cupcake lined tins and bake according to the instructions in the link above until nice a risen and green! Half were decorated with green buttercream icing.
When cooled, make some buttercream icing (use half the given recipe if only icing half the cakes like I did), and stir in a couple of tablespoons of Bailey’s Irish Cream…it’s a bit of a trial and error – if you want more Bailey’s flavour, add more – but balance the consistency out with some more icing sugar so that you can pipe it without it running everywhere!
Pipe swirls and leave plain, or decorate with sprinkles. Enjoy! The buttercream on these is delicious – and NOT for kids ;)
