Barbecued Whole Fresh Trout

We stuck to the healthiest of options since I’m on a diet (blah) and on our quick stop into the supermarket in town, we spied whole fresh trout for a bargain £1.60! I commented that the fish would be great on the BBQ and so we bought one, along with a few other goodies.
The fish was already gutted for us, so it was easy enough to prepare. I simply salted the inside of the fish with sea salt and added slices of lemon.

Rather than put the fish straight on the grill (for fear of it falling through!) I brushed some olive oil onto a sheet of tin foil and placed the fish on top. I then rubbed a little bit more oil on the other side of the fish.
Onto the hot coals for about 8-10 minutes each side – we closed the lid of our smoker BBQ and was able to give the fish a lovely smokey flavour. I also grilled up some king prawns on skewers.
We had the fish with some salad and garlic & rosemary new potatoes (which is my go-to side for BBQs!)
The trout was lovely – smokey and lemony, and as long as you don’t mind faffing with a few bones, feels like such a treat for less than £2!
