When it’s back to school time and you need a tasty and nutritious snack for your kiddos (or even for you!) then this recipe for banana walnut muffins is one to try.
These muffins are so easy to make and you’ll have them made in around half an hour. That’s probably enough time for the kids to change out of their uniforms and chill out before having to do homework!
As long as your school is okay with foods containing nuts, they’re perfect for packing into lunchboxes, as well as preparing for a school bake sale.

Banana Walnut Muffins
Ingredients
- Non-stick cooking spray
- 3 bananas mashed
- ¼ cup unsalted butter melted
- ¼ cup while milk
- 1 large egg
- 1 tsp vanilla
- ½ cup brown sugar
- ½ cup sugar
- 2 cups all-purpose flour plain flour
- 1 tsp salt
- 1 tsp baking soda bicarbonate of soda
- 1 cup walnuts chopped + extra to top muffins before baking, if desired
SUGGESTED PRODUCTS
Instructions
- Preheat oven to 180°C/350°F/Gas 4 and spray a standard muffin tin with non-stick cooking spray and set aside.
- Add the mashed bananas, melted butter, and milk to a large mixing bowl. Mix to combine.
- Beat in the egg and vanilla, and brown sugar.
- Add in the remaining dry ingredients and fold in until just mixed.
- Fold in the walnuts.
- Fill muffin pan cups to about 4/5 full. Top with additional walnuts, if desired.
- Place in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
- Remove from oven and cool for at least 5-10 minutes before serving. Enjoy!
