Hash browns are a yummy side for breakfast and brunch and traditionally they are made with shredded/grated potato and onion that is seasoned, shaped into patties and fried.
But add cheese to them and that takes this breakfast food to a whole other level!

Ingredients & Equipment Used In This Recipe
While most ingredients can be bought in grocery stores, for your convenience, any specialized or notable ingredients (and equipment) needed for this recipe have been listed below and linked to Amazon or other stores if available online. - Fresh Produce – Potatoes, Onions.
- Cheddar Jack Cheese – for my non-American readers see my notes below.
- Garlic Powder
- Dried Rosemary – you can use fresh rosemary if you prefer.
- Seasoned Skillet – this is the cast iron cookware used to develop this recipe, but any large well-seasoned cast-iron skillet will work. You could also use a large non-stick frying pan to make the hash browns.
Monterey Jack, sometimes shortened to Jack, is an American white, semi-hard cheese made using cow’s milk. It is noted for its mild flavor and slight sweetness. In addition to being eaten by itself, it is frequently marbled with Colby to produce Colby-Jack, or with yellow cheddar to produce Cheddar-Jack.

If you can’t find Cheddar-Jack or Monterey Jack, then you can the following cheeses as a substitute – Cheddar, Gouda, Edam or Havarti – as these cheese melt well.

Crispy Cheesy Cast Iron Hash Browns
These crispy and Cheesy Hash Browns are one of those breakfast side dishes that really bring the whole spread together!
Ingredients
- 3 cups shredded potatoes
- ½ cup shredded white onion
- 1 cup cheddar jack cheese, finely shredded
- ½ tsp garlic powder
- ½ tsp dried rosemary (or 1½ tsp fresh, finely chopped)
- Sea salt and black pepper, to taste
- 2 Tbsp extra virgin olive oil (+ more if needed)
- 2 Tbsp unsalted butter
Instructions
- Place the shredded potatoes and onions in a muslin or kitchen towel and squeeze all of the liquid from them. To get crispy hash browns you need the potatoes to be as free from moisture as possible.
- Add the potatoes, onion, cheese, garlic powder, salt, and pepper to a large bowl and mix until thoroughly combined.
- Heat olive oil and butter in a large cast-iron skillet over medium heat until the butter is melted. Carefully swirl the skillet to ensure the bottom is evenly covered.
- Working in batches, add the potatoes to the skillet and shape them into patties. Cook for 4-5 minutes until golden brown before flipping. Cook for another 4-5 minutes, or until golden brown and crispy.
- Remove hash browns from skillet and keep warm. Repeat Step #3 with the remaining potato mixture. Add more olive oil to the skillet, as needed.
- Remove from heat and transfer hash browns to individual serving plates. Serve immediately. Enjoy!
