I was selected recently to be a #MorrisonsMum and hubs and I went to our nearest Morrisons supermarket to buy the food for our Bank Holiday Monday Family BBQ, I promised I would share all the recipes, so here is my recipe for My Perfect Chicken Kebabs.

The reason that they are perfect is because I marinate the chicken pieces with Greek yoghurt and a little olive oil, along with some seasonings before threading onto skewers to cook over the hot coals.

Unfortunately, in my rush to get these cooked, and the speed at which they flew off the grill, I only have the one photo of a well done skewer! Believe me though, under that crispy exterior is lovely soft chicken!

You don’t have to cook this chicken over a barbecue though, the next day, we cooked the chicken in the oven, and it was truly perfectly cooked! Not dry like chicken sometimes is, but sweet and succulent!

I’ve decided (since I’m on a diet) that I’ll be including the calorie count for each dish which I’ve worked out using the labels on the food packaging and other online resources.

I’m also including how much each dish costs to make using the ingredients I bought from Morrisons. Added ingredients such as herbs, spices and olive oil etc are not included as I figure most of us have those sorts of things in our store cupboard (I know I do!)

My Perfect Chicken Kebabs

Serves: 12
Ingredients
  • 8 skinless, boneless, chicken breasts
  • 6 tbsps Greek yoghurt
  • 1 tbsp olive oil
  • juice of half a lemon
  • salt & freshly ground black pepper
  • 1 tsp dried mint or oregano – optional
  • To Serve (optional)
  • pitta bread, toasted
  • fresh parsley, chopped
  • tomatoes, chopped
  • white onion, finely chopped
  • squeeze of lemon juice
  • hummous
Instructions
  1. Cut the chicken into bite size chunks and set to one side.
  2. Make the marinade by mixing together the yoghurt, olive oil, lemon juice. Season with salt and pepper, and if you wish, add some dried herbs.
  3. Add the chicken to the marinade and mix until all the chicken is evenly coated.
  4. Cover and chill in the fridge for a couple of hours.
  5. When ready to cook, thread the chicken onto skewers and grill over hot coals on the barbecue for 10-15 minutes until golden on the outside and cooked through completely. This will depend on the size of your chicken pieces and the ferocity of the burning coals on your barbecue!
  6. I’ve given the ingredients for how I like to eat my chicken kebabs, but eat how you like! I cut open a toasted pitta bread and spread with a little hummous, I then pile in some fresh parsley, tomato, onion and chicken and give a squeeze of lemon juice to finish off – delish!!

Costings…

The chicken in Morrisons was £5 per pack, or 2 for £7.50.  It’s impossible for me to work out the cost of the Greek yoghurt, but a huge 1kg tub was just £2 – that was definitely my bargain buy! Olive oil, herbs and seasonings are staples in my store cupboard,

I’m going to throw caution to the wind and estimate that per chicken kebab skewer is about 70p!

Calories…

Working out the calories for this one is tricky, since I haven’t jotted down the weights, but after guesstimates of the weight of ingredients, I think that the total calories for this whole dish is approximately 1800 kcals. Per serving it is 150 kcals.
