Last weekend we took advantage of the hot summer sun and enjoyed two barbecues! I love outdoor cooking – there’s something good about sitting outside with your family and friends and eating yummy food that’s been cooked over hot coals!

After making my BLCT Sliders, my son suggested making burgers with bacon and cheese inside the actual burger patty. So, I left it up to him and hubs to get those made whilst I worked on other things! And they did a bang up job! Keep reading to find out how they made them :)

Streaky bacon was cut into small pieces and added to some beef mince with onion, salt and pepper. After mixing together, it was divided into four portions.

The boy then grated up some cheese and squished it into balls…this was so that the burger meat could be wrapped around it – a bit like a Scotch egg!

Using our burger press, hubs formed the bacon and cheese stuffed burgers, although, if you don’t have one of these, you can always use your hands to make the patty!

The burger patties were stacked with wax discs between each one, and then placed in the fridge until it was time to grill.

Time to cook and onto the coals! Grill for 5-6 minutes on each side until cooked through. Our BBQ is a smoker style, so hubs tends to put the lid down and the smoke makes the burgers super juicy!

No need for cheese since it’s already inside the burger! Just add your favourite toppings – ketchup, onions, tomatoes, relish, mustard and away you go!

My boys did good – the bacon and cheese stuffed burgers they made were delish! We’ll definitely make these again! 

Bacon & Cheese Stuffed Burgers

Bacon & Cheese Stuffed Burgers

Yield: 4

Tasty cheeseburgers with cheese inside the burgers!

Ingredients

  • 500g beef mince
  • ½ white onion, finely chopped
  • 4 rashers streaky bacon, chopped
  • salt & pepper
  • 100g cheddar cheese, grated
  • 4 burger buns
  • your choice of toppings - e.g., ketchup, mustard, relish, onion, lettuce, tomato

Instructions

  1. Divide the cheese into 4 (25g) portions and form into small balls.
  2. In a bowl, mix the beef mince, onion, chopped bacon. Season to your preference with salt and pepper. Divide into 4 (125g) portions.
  3. Flatten each portion of the burger mix slightly and add one ball of cheese to each. Pull the meat up and around the cheese to encase it in a ball and then using your hands or a burger press, form a patty.
  4. Grill on the barbecue or under a grill for 5-6 minutes on each side until cooked through.
  5. Serve on burger buns with your choice of toppings.
